
Fall is the season for cinnamon, warm tea, crunchy leaves and banana bread! As a university student living alone with only a stove and airfryer to keep me company, I’ve been missing baking quite a lot. I’m by no means a pastry chef— that title is reserved for my best friend who actively studies in a pastry school (love you bro, please have sweets ready for my next visit), but I feel like it’s a good way to destress.
I’ve been trying to eat healthier for the past few months after a minor health-scare (I’m ok now) but I’m a major sweet tooth who refuses to eat like a rabbit. Consequently, this recipe will be on the healthier side but of course, I’ll give alternatives for people who want to eat the real thing.
I know everyone hates a life story before recipes and I’m not about to lie to you and say this is a secret family recipe I had to fight my grandma for so here is my easy airfryer banana bread recipe!
Ingredients:
2 bananas
50g of ground oats (you can substitute for normal flour)
1 egg
15g of honey (you can substitute for brown sugar)
1tsp vanilla extract
1tsp of cinnamon (or as much as you want!)
Instructions:
- Smash the bananas in a heatsafe container
- Add the vanilla extract and honey
- Crack the egg and mix
- Incorporate the cinnamon and flour into the mix
- Put in the airfryer and bake at 170C (338F) for 20 minutes
- Let cool down and drizzle some caramel on top (if you like)
- Serve warm with a cup of tea and enjoy!
